the yelling is called "kiai", and it's for a strong strike and intent. They also shout out the part they're going to hit, which also has to do with intent.

i cant seem to get the difference between shiaigeiko and jigeiko i seem to be doing shiaigeiko every time even during jigeiko

they do a lesson which is called: "ji-geiko", a special
fighttraining for combining the points posture, holding the bamboosword, concenration and others....
also for preparing tournaments! ^^
