Having looked at a few NY pizza videos it seems you cant get hold of cheese very easily. I find that surpising. I would have thought you could transport parmesan in the same way we do in england and making mozzarella seems quick and easy. I am not 100% on this.

I saw on one video from jersey the chef using presliced mozzarella! That's used by the crap restaurants over here.
