@abelbendel Scraping the inside of the bowl is perfectly acceptable on a running Kitchenaid Mixer, particularly with long tools like the one he uses, or with a spatula. His biggest mistake is to use a dough spiral on a mixer with less than 450 watts.
Ya the thrust Bering in a K5 K5SS will not have any issues with a spiral dough hook. I rebuilt myn from the frame up out of 2 broken ebay mixers.
Get a kill a watt meter for the mixer and be sure you stay under 200W when using it and it will live for ever( mechanical damage happens when you pull more than 300W ). Most bread batches i do pull 50-100W on speed 2.
Completly insane... scraping inside the bowl, when its on...??! - i think u should se some pictures of that can happen to ppl, then they "play" or use equipment, without the propper knowledge!! ..u can easely loose a hand(atleast) that way!!.
For others, who are watching this - TURN IT OFF, before u do anything inside the bowl!
And ill warn agains using the spiral hook in a minor/lesser secured mixer ...it makes a lot more presure on the equipment, than the minor C-hook does!
kitchenaid provides no good reason that the spiral hook is "only for" the newer versions.. probably just want to sell more of the newer versions. They're almost exactly the same as the older versions on the inside. Using the spiral hook in an older model should be perfectly fine. If someone can conclusively show otherwise feel free to prove it.
I agree that the K5SS was not designed to use the spiral dough hook and that videos like this tempt other to purchase the the spiral hook and do the same thing and cause potential harm to their mixers. The present C hook is still a faster kneader than the dough hook that came with mixers purchased prior to about 1992. If you are concerned about mixer longevity, it is best not to use an attachement the mixer was not designed to accept. Scraping a bowl with the motor on is inviting an accident.
i would like to mention, that the spiral and the Dynamic fork on the santos mixers are both extremely effective, infact the spiral kneads the dough more aggresively, that's why ACE bakery (on eof the largest bakeries in the world) uses the spiral dough hooks.
Wow--you have me wanting to upgrade to a new KA now, Villa Roma, so that I can have one of these spirals. I currently have an KA Artisan, so the spiral is not an option...
While it's not as dynamic a fork mixer (Santos), it sure beats the dreadful "C" hook I am stuck with. It really does seem to simulate the hand kneading process as KA claims....
