The secret to bread is the yeast, and of course the flour. If you don't want for your bread to stick to the pan and you don't want to fill your house with smoke use some olive oil to dress the pan so the dough won't stick. If your dough is dry enough it won't stick. I've done it many times.

The recipe looks good. I use a piece of parchment paper and a little sprinkling of corneal. I let the loaves rise right on the paper. Works great.

Instead of butter you could just use cornmeal straight up. Or it the dough is inclined to stick use an oil with a low smoking point like peanut oil or at the very least canola oil.

You are never supposed to use any metal utensils let alone bowl with yeast!

@IlyaKhleboyko Your not supposed to use moonshine for many things... I did just read yesterday about a no knead refridgerator bread that uses just a slight amount of alcohol left over from the rising process to make really new dough taste like an aged dough... Just saying....
