Salted for 3weeks, pork ham and shoulder dried for 1hour and then smoked for 1hour as well, with cherry and hickory chips.

  • 7-9 pound I do 12 hours!

  • It depends on the weight of the meat and the thickness. but dont worry about the meat when it looks a little more pink then usual. i usually smoke my pork shoulder for at least 12 hours. remember low and slow keep your temp around 225-250 degrees Fahrenheit.
