Home-made Danish rye bread.
Recipe:
"1st dough":
2 tbs whole fennel seeds
2 tbs whole anisseed
2 tbs ground caraway/cummin
2 tbs salt
5dl/2 cups boiling water
4dl/1.7 cups crushed rye
1dl/0.4 cups linseeds

Grind fennel- and anisseed in a mortar and mix all ingredients to make a dough. Cover the bowl with cling-film and leave in room temp for 1-3 days.

2nd dough:
75g yeast
5dl/2 cups of luke-warm water
2.5dl/1 cup dark molasses/syrup
4dl/1.7 cups pealed sunflower seeds
1dl/0.4 cups pumpkin seeds
9dl/3.8 cups course rye flour
6dl/2.5 cups wheat flour

- Mix yeast, water and molasses/syrup in a bowl.
- Mix the contents of "dough1" into the same bowl.
- Mix in sunflower- and pumpkin seeds and add flour a little at the time. The dough shall be very sticky.
- Work the dough in a processor for 30 minutes. It should still be very sticky.
- Heat the oven to 250C/ 480F
- Dress 3 bread molds with baking paper and divide the dough in them. Sprinkle some rye flour on top and let them rise for 30 minutes.
- Make a cut in each dough and bake them for 1 ½ hour in the lower part of the oven. Spray some water into the oven twice during baking to get a nice crust.
- Cover the breads with tin-foil after 30 minutes to prevent them getting burned on top.
- Take the bread out of the molds and let them cool on an oven grate.
