If you have a lot of stock from the turkey do you need the chicken stock?

Not sure if you mean turkey drippings. Stock is the liquid needed to mix into the drippings(the more drippings the richer the flavor). However, you will need stock to dilute the drippings.

Thanks for the comment and I am sure you will enjoy the ease of making this gravy. Just don't add any salt as there is enough in the broth and gravy mix.
