@SvennJohansen This is a variation on how jerky has been made for 1000 years, so I would say it is safe.

@Warpedguitar28 The cells of the beef have lost their water. Usual cooking caramelizes the sugars and breaks the proteins. By losing their water, the beef is no longer capable of supporting bacterial growth. As far as your stomach is concerned though, it is raw, and it is difficult to digest.
If you were to eat a ton of jerky, you would probably suffer constipation.
