@sundari2009 Something you can do to prevent this is to cut the eggplant then salt them and let them sit for an hour. This will draw out some moisture and will also prevent the eggplant from soaking up the oil.

Usually to make them crispy, they are dipped in eggwash, and then coat with bread crumbs and bake. But since I do not use egg, I made with self rising flour and my EPP were so crispy...

I grate firm tofu to substitute for the cheese as I am very sensitive to the casein in the milk or I've used vegan cheese from he health food store and it is very good that way too. Self rising flour: is that Bisquick?

Self rising and bisquick are different but for this recipe, you can use even bisquick. Thanx for sharing...
