Cuisine: Italian
A classic Italian baked eggplant Parmesan casserole with fried eggplant slices layered with Mozzarella, Parmesan, marinara sauce. If you don't want to fry eggplant then Eggplant slices can be dipped in egg(use egg substitute for vegan) and bread crumbs and then bake, instead of frying. This is one of my favorite italian dish I usually eat at "Olive Garden" restaurant. I tried at home with many different ways but this is the best recipe without egg. You will find no difference at all than restaurant...Try and share with me...

  • That looks soooo delicious. Looking forward making a vegan version of this. Thanks so much for the recipe! You have great recipes.

    Hi

You most welcome and keep enjoying. More has to come, yet.

  • I grate firm tofu to substitute for the cheese as I am very sensitive to the casein in the milk or I've used vegan cheese from he health food store and it is very good that way too. Self rising flour: is that Bisquick?

  • @courag1

Self rising and bisquick are different but for this recipe, you can use even bisquick. Thanx for sharing...

    Hi

    Thanx for sharing...enjoy!

  • @sundari2009 Something you can do to prevent this is to cut the eggplant then salt them and let them sit for an hour. This will draw out some moisture and will also prevent the eggplant from soaking up the oil.

    HI

Usually to make them crispy, they are dipped in eggwash, and then coat with bread crumbs and bake. But since I do not use egg, I made with self rising flour and my EPP were so crispy...

  • Hi Bhavna,

Thanks for explaining in such a nice way!!

I tried this recipe & it came out tasty EPP.But one thing I wanted to ask what should I do to make EPP patties more crispy??Plz. let me know...
