I've never prepared tofu this way before - so simple. I made it the other day and the combination of flavours was just want my tongue wanted and never knew. Thanks so much for this idea and the demo.

i totally agree about them needing to be on the food network channel! Are their even any vega/vegetarian shows on the channel? I haven't come across any.

Nice and easy....is great for moms that are always on the go.

I like the use of the pastry blender. I've also used a cheese grater to very good effect; it allows you to get a very finely grated tofu texture.
As well, I heat the peanut butter a little and it makes it easier to integrate into the dish.
Finally, another nice way to use this dip is in a rice paper roll with some lettuce or other sliced vegetables (like you're using). This works great, makes it much more friendly for serving, and keeps thiings light and tasty.

Awesome recipe, quick and delicious! I prefer to saute the tofu before actually mixing it though.
It is SOOOOOOOOOOOOOOOOOO hard to find good Vegan recipes, but you make it so easy and accessible. Thank you so much. And it sounds just lovely.

that looked really interesting! im wondering if the ginger flavor overpowers the recipe? and i guess we can use any kind of peanut butter?

Thanks! No, the ginger is pretty mild tasting in this recipe. A perfect balance for the other flavors. Use any kind of smooth-style natural peanut butter.
We make this recipe all the time. It's yummy!
