For me, the originaly trilogy + EU starting with Zahn is canon for me (not counting Shadows of the Empire - wth?)
The Clone Wars and Pre-Trilogy have so many holes in them I can barely watch that stuff. However, the Clone Commando series of books is just excellent, so I consider those to be canon.
TIE Fighter wasnt done before parts of the EU. There were EU books right from the start in the 1970ties. But what would become the modern EU was started by Timothy Zahn with the Thrawn Trilogy - guess where TIE Fighter got that character from. But in all honesty, does it realy matter what is canon and what not? For many old SW fans its only the Original trilogy. For many that became fans with the TV reruns and the books of the early ninetees, its the O-Trilogy + those initial books.
For many the Prequel Trilogy just fucked up their beloved continuum. So they kept with the picture that was painted of the SW universe in the original Trilogy and on which was expanded by the authors of the first EU books that followed Zahn (some better some worse). Lucas Arts may be holding the rights to declare X to be canon but that realy aint of much consequence for many fans out there. Look at fan made projects around the web, wheter its fanfilms or games or fan fiction.
LucasArts is George Lucas. He signs off on the story and everything. Besides, TIE Fighter was done before the launch of any of the EU. There is even a nice little memo from Lucas' desk in the manual for the games X-Wing and TIE Fighter. Loved those games.
My guess is that GL has a secretary who signs this and that.
You know I love playing computer games too, but that doesn't mean I believe in a crime syndicate (Zann cons, EAW-FOC, released by LucasArts) with superiour technology and influence over the galaxy. GL put some of the EU-ideas to a rest when he did the PT, like when he established that 3PO was built by Anakin. It's just common sense to view the movies as canon#1.
