believe it or not these 1 oz shots are still very good for cappuccinos. and if you want a 2 oz shot just add that much hot water to it. trust me this method makes exelent shots!
i notice thats a bit of a fast extration. good double shot though. my personal favorite method is to use much finner grind and a very soft tamp with a good polish, oh and a lower brew tremp of about 198-200 F. this way you end up getting about a 1 minute long extraction, in this time 1.5 oz at most has come through. its a very strong, very fruity shot. this is what is generaly called a restretto. meaning 'restricted' shot. the grinder that i use is a Kyocera ceramic hand chrank. great grinder!
