I'm very impressed with your series of videos, outstanding quality! What kind of paint are you using here? ...acrylic, tempra, gouache, oil? I can never find any information on the proper paint, or at least the modern equivalent of that from antiquity.
Traditionally, parchment (or vellum) is indeed a highly refined animal skin. I do believe she is working on true parchment here. Look at her 1st video in the series. You can see the irregular shape of the material. The closest paper product that I have seen, to simulate the look and feel of parchment, is called "Pergamenata". It can be found online through a few specialty calligraphy and book-binding suppliers.

Real parchment, you can see the follicle marks.
There is no real substitute.
