Vegan Iron Chef Thanksgiving - Battle Mushroom (Director's Cut)

=== Team 619 Menu ===
Course 1: Mushroom Sushi Sampler
1. Crimini and cashew cream salad inside out roll with heart of palm and scallion, topped with a slice of baby bella mushroom lightly sauteed in (vegan) butter.

2. Roasted yam with pickled mustard seed maki, topped with sake marinated sesame fried chanterelle mushroom.

3. Garlic asparagus/scallion nigiri topped with a sake-marinated sesame and garlic sauteed shiitake sombrero.

Served with mushroom infused soy sauce and a chantarelle mushroom infused sake.

Course 2: (Vegan) Cream of Mushroom Soup.
A cashew cream-based soup with loads of freshly chopped bella, crimini and porcini mushrooms. Garnished with a crisp baby bella slice, sprig of fresh rosemary and a clove of soft roasted garlic. Served with dark rye toast topped with a pâté of red wine, walnut, crimini and shiitake with hints of sage and rosemary.

Course 3: Grilled Portobello Salad
Large Portobello Mushroom Caps drizzled in a balsamic reduction and grilled to perfection. Served sliced over a bed of toasted almonds, arugula, baby spinach, and fresh spring greens.

Course 4: Mushroom Risotto
A hearty Risotto with crimini, shiitake, and porcini mushrooms, flavored with rosemary, dry white wine and balsamic vinegar. Topped off with caramelized onions, garlic, and chantarelle and served with a dollop of roasted garlic cashew cream.

Course 5: Royal Trumpet Mousse
A cardamom and royal trumpet mushroom mousse garnished with a dusting of cardamom and turbinado sugar, a whole royal trumpet mushroom and a cardamom seed.
