I've worked in culinary arts for over 25 years and I've built many successfully restuarants from the ground up. If I ever saw a cook hacking an avocado seed with a knife, and holding in their hand they would be fired immediately. The proper safe method is dispose of it while it is halved and on a firm surface and using a spoon to nudge it out. No amount of gauc lost is worth the risk you take with your method.
