Good cooking Christy. I heard a fan when you opened the oven. If you had it on convection bake that would mean a 375 degree oven for those who don't have the convection option. There is a 25 dergree adjustment between the two methods.
If I may, I'd like to add that although 180 degrees is recommended by the FDA that is (rocket hot) to borrow an Aton Brown quote. I'd pull that bad boy at 155 in the breast and let it rest at least 45 min before carving. You wont believe the result!

I did a video on cooking a small turkey breast in a crockpot, and thought I might work my way up to roasting a stuffed turkey in the oven by Thanksgiving! You made it look so natural and easy--and that turkey was *big*! Thanks for visiting and commenting!

I do have a convection oven. I got the roasting temp from Mrs. Julia Child. It works with the convection oven and her book does not say anything about weather her cooking temp is for convection or not. I would still reccomend that my viewers roast at 325. As far as the internal temp... i dont want any viewers to get food poisoning--- so please make sure your internal temp is 180 :) When i pull mine at that temp they are always nice and juicy!!
