The reason the hands move is to keep the light pressure on the mouth. It is not a pulling of the horse and you would not do this show canter for miles.
Why is the rider pulling up and letting down with his hands at every stride, as if the horse can't get up into the canter without being pulled up into each stride? It looks like the man is pumping up an air mattress or something. Though gaited horses were suppose to have a "rocking horse canter". A person would become exhausted doing this "pumping up and down" for very far! My arms would fall off after a couple miles....
My experience with the "rocking horse canter" is just that, its rocking you, backwards and forwards. I don't find it comfortable.
