Yes, you would. I do have a habit of staring at random people. However, even when they're alone in the lift (or just an elevator, for that matter), there's no need to turn around so quickly and dramatically. Oh well. It's Star Trek. They can get away with Warp 10 lizard-humans and Charlie X, why shouldn't they get away with something as trivial as how they enter a turbolift?

@44jeanette44 the same reason you do that in a normal lift, to avoid staring at people an creeping them out. i'd hate to be in in a lift with you
