@Fairaday1 You can leave the roasted peppers out, but I wouldn't substitute them entirely with sun-dried tomatoes because the tomatoes have such a strong flavor. You would add 1/2 cup total of tomatoes and just leave out the peppers. -Cindy

This looks so yummy, but may I ask, would there be any appropriate substitute for the chopped roasted peppers ? Maybe double the amount of chopped sun-dried tomatoes while eliminating the peppers ? Would this work ?
