I do believe that all the non-english Pokemon games have the word "shop" in front of it (minus Sinnoh Pokemarts). My Japanese version of Pokemon crystal has the word "shop" on it too.

But it shows the Pokémon you beat Gary with. He didn't even fight Gary, so obviously there were no Pokémon to show, so it skipped right to the trainer info. The guy who uploaded this didn't cut out anything.

It stops at the Elite Four Hall of Fame because that's the end of the game... the last part of the game is seeing your trainer info at the end of the hall of fame, so obviously it wasn't cut. It's just a very complex glitch exploiting the weird effects of moving certain key items in Red and Green.
