뉴질랜드의 북섬에 있는 로토루아는 온천으로 유명한 곳인데요. 간헐천과 온천이 1,200여 개나 된다고 하니 과연 온천의 도시라고 불릴 만하죠?

인터뷰-에덴 도이지(마오리 전통 마을 관리자) "마오리족은 모든 음식을 땅속에서 익혀서 먹었습니다. 뜨거운 돌 위에 채소와 육류를 놓고 2~3시간 익혀서 먹었습니다."
요리의 정식 이름은 '항이'입니다. 일종의 찜 요리라고 할 수 있습니다.

Hangi actually refers to the method of cooking in the ground with hot stones, or to the underground oven so created, and to the food so cooked.
