@pascalelzinga I heard it was 7% but still, I'd take 8% over the whole bug like some people in other countries seem to enjoy. lol. Candied cockroaches and ants... makes contaminated chocolate sound perfectly edible.

one more thing for tempering white chocolate is it the same temperature as the dark chocolate or not.?

The best instructional video on chocolate tempering. Very well explained. I watched many videos but didn't feel 100% sure of the instruction. Congratulations!! Keep it up and hope to see more chocolate videos from you!!!
