INGREDIENTS
1 1/2 cups grated zucchini (or whatever vegetable your crazy refrigerator has in it)
1 egg
2 tablespoons flour
1/2 cup crumbled feta cheese (or another kind of cheese, grated)
1/4 teaspoon salt (this is optional -- you might not need it if your cheese is salty)
Butter or olive oil for frying
Makes 8 pancakes

This recipe is a total success! Feta cheese makes these pancakes so yummy! I added extra couple tbsp of flour to help the batter stick together so that the pankakes are not too soft. They needed a little salt on top after I cooked them. thank you Hila for this awesomeness!

Yes, but I would recommend squeezing the excess water out of the grated zucchini in that case. Wrap it in a clean towel and squeeze really hard!
