材料 / 黑糖 1杯半、熱水 1/4杯、地瓜粉 1杯又4大匙、在來米粉 3杯、冷水 6杯
調味料 / 鹽1/4小匙
做法:
1、黑糖先加熱水攪拌,再加入4大匙地瓜粉調勻成黑糖液,備用。
2、在來米粉加入地瓜粉1杯,再加入水6杯調勻成粉水。
3、取1/3量粉水,倒入小鍋邊煮邊攪至稠糊即離火,續攪成糊狀,再慢慢添入剩餘2/3量的粉水,調成稀糊的米漿。
4、取2/5量的白米漿,調入黑糖液為成「黑漿」,其餘3/5白米漿加鹽調勻成「白漿」。
5、模型四邊抹油,底部鋪上烹飪專用紙,放入沸騰蒸鍋中,倒入1/5的黑漿推勻,加蓋蒸2分鐘,再倒入1/4量的白漿推勻,再蓋鍋蒸2分鐘。
6、如此交錯,最後一層黑漿倒入推勻後,蓋鍋蒸15分鐘,取出放涼脫模切塊,即可。

  • I am not sure sweet potato starch can replace with taro starch or not, I have not try this recipe yet. I think it is to get "QQ" result.

    mix brown sugar 1.5 cup, potato starch 4 tablespoon, hot water .25cup.

    mix rice flour 3 cups, cold water 6 cups, potato starch 1cup

    she doesnot use white sugar, instead she use brown sugar(to get the brown layer color and taste). In white layer she puts salt.

    Today i try with already mixed powder, in that recipe batter is mix with coconut milk, not water.

  • Thank you for sharing with me.(brown sugar,salt,rice flour,sweet potato flour?if I don't have sweet potato flour what else I can add in?are you sure no white sugar in you rice mix?.please give proper measurement for the ingridients.thank you again I 'm going try this steam layer cake,feed back.janaveeve .

  • I would like to know the ingredient in an English please.I guess cocoa powder, corn starch ,rice flour,missing sugar or already add in?if you not sharing I can 't vote for you.if you can 't than don't this again
