What a delicious looking soup! And for those of you anti-butter people, get over yourselves! Butter is in many delicious dishes. Just moderate your diet... How did our grandparents ever survive without fat-free, low-sodium, lite, low-calorie, etc.....
@emmaslut69 wow i find myself back in chicago for work and once again my co worker wanted to go back to the bistro 110 for the garlic bread. Alsace ...i mean ATLAST the roach110 is now closed...... hopefully for good!
I was visiting Chicago, IL with some co workers and we stopped in the Bistro 110 for dinner. We thought it was a classy establishment until we saw cockroaches scampering about the restaurant. Funny enough I had the Butternut Squash soup and it was okay. But the server who sold us on it appeared to be high or drunk on something told us "the soup does not have truffle oil" All said and done the manager took a long time to come to our table and address the problems.
Nice technique but just gave me an idea that would work better than the water. I would just cook the squash down with chicken stock and use the stock to complete the soup. Hit it with cream and season with what ever you like.
