Jibing with the Pacific Action sail on my kayak.
I start out on a broad reach on a starboard tack (the wind coming over my right shoulder). The downwind (left) side of the sail is pulled slightly towards me, forming a scoop cross-section to the wind when seen from above. This provides maximum speed, as the sail is powered not only by the wind's push on the side nearest me, but also by a "suck" from the low pressure area on the side of the sail away from me.
As I swing the boat across the wind, I pull the right side of the sail closer to "scoop" on the opposite side. You can see the boat slow down briefly as I turn across the wind, then pick up speed again on the new port tack.
For a sense of the boat's motion, watch the shore in the background; to see how the apparent wind is changing as I turn, note the tell-tales (the little ribbons hanging from the sail's lines.)

You keep bearing away then all of a sudden BANG and the boom comes across and sacks the leward stay
