what about a bushe de noel that has no chocolate in it? (my mom has kidney disease and cant have chocolate)

how about a recipe for pralines that DOESNT require a candy thermometer or dropping hot sugar in cold water to test the stage? Just show us the texture and color its supposed to be when the sauce is doen cooking! I'd really appreciate that!
