My initial thought was it puts more oxygen into the combustion chamber but I wanted to know the working of a turbo however this is too laymans for me, more physics please!

well the rule of thumb is, you don't put a freakin turbo in your car if you want better gas milage. You put turbo if you want more power. thats it
if you want a better milage, go for a hybrid
