In this video I give my recipe and techniques for getting an excellent NY/NJ style pizza dough. This is made in my home with a Kitchenaid.
Recipe is as follows:
1lb AP flour
10.9OZ water
2 tsp salt
1/2tsp instant yeast.
Autolyse for 30min
KitchenAID Mixer on speed 3 for 6 min

note: this may slightly vary from the video, but I have been continually improving it, and now this is my dough.

  • Thanks for the detailed instructions. Do you use any oil? I have never seen a dough recipe without oil.

  • @CBarrowMr I dont use oil in the dough. You can use a bit on the dough before cooking if you want. Just use a light olive oil not extra virgin. Extra virgin is too strong in taste and really only belongs in salads in my opinion.

  • why let it sit an hour after combining the ingredients? just start the kneading procces. and why let the balls sit for a day?

  • @Musashi242 The idea behind letting it sit an hour is to allow the flour to hydrate. Look up "autolyse" for more info on this concept. As for letting the balls "cold rise" for a day(in the refrigerator)... I believe it develops better flavor in the crust allowing the dough to ferment for a longer time. I have tried making the pizza the same day but the results are never as tasty.
