It's a kind of icing that some people call 'fondant' and some call 'roll out icing'. I think the latter term is better, as fondant can mean various different things, whereas the roll out name is perfectly clear. You can buy it ready made now in all kinds of different colours, which is far easier that making and colouring your own (which is what I always had to do when I first started decorating cakes)
