In this recipe video from Veria Living Chef Ann Gentry prepares a delicious and simple dairy-free cheddar cheese. The secret ingredient? Cashews!

Non-Dairy Cashew Cheddar Cheese Ingredients: 1 1/4 cups raw cashews 1/2 cup nutritional yeast (available in health food stores) 2 teaspoons onion powder 2 teaspoons sea salt 1 teaspoon garlic powder 1/8 teaspoon ground white pepper 3 1/2 cups plain soy milk 1 cup (about 1 1/2 ounces) agar flakes (a vegetarian gelatin, available in health food stores) 1/2 cup canola oil 1/4 cup yellow miso (fermented soybeans, available in health food stores) 2 tablespoons fresh lemon juice

  • This is a wonderful demonstration for making non dairy cheese. Can you please write the amount of each ingredient you used on the description bar, it is hard to estimate how much of each thing to use.

  • Can you use almond milk or any nutmilk instead of soy? There is too much GM soy in the marketplace and a lot of uncertainty about it;s health benefits/

  • @itsMinuteMaid Hi, thanks for your comment. Yes, agar agar is made from a type of bean and it's the most common vegetarian alternative to gelatine.

    When it comes to the ingredients' cost, it really depends on where you buy them and what are the dairy alternatives. In general, ingredients tend to be better value than a prepared food, because you can use them again and again.

  • Two questions: 1. To buy all of those ingrediants, does that cost more than if you were to buy some Vegan/non-dairy cheese at the store? 2. Is agar agar Vegan?

  • @Xilosphere You can search for natural food stores in your area using the Green Eats guide on veria.com.
