what did i do wrong if the outside of the macaron looked normal but the inside had mostly air and cracked?

It should be light and cracked inside, but if it was a bit too much it might be sightly overcooked?

Can you use plain old granulated sugar instead of castor sugar? Or should I go out and buy some superfine sugar?

Castor sugar works much better so we would recommend getting some if you can!
