I think couscous might be one of my favorite pantry staples. Its uses are endless... and it is a swift option to use when you may have a bare refrigerator, or just a few vegetables on hand. I fell in love with it 20 years ago when I first discovered how much I loved Moroccan food. Once it became a standard for me, I found it to be a natural and exciting fit for the way we like to eat as a family. It is the perfect side to any meal, works happily year round... does well with salty liquids (think soups). Couscous loves tomatoes, any vegetables really... It adores and performs quite brilliantly with lamb... (You can surely hear me smacking my lips.) I have created this dish as a stand alone (it really is lovely) or, should you choose, as a faultlessly well-rounded side to any fish or meat. The vegetables cover the couscous entirely, so no worries about it drying out. Also, the addition of olive oil and wine facilitate this as well.
