  • Technically, Julienne cutting (like baton cutting, and much like matchstick cutting, it's a.k.a.) can be any length - although, 2 inches or less is the standard. I assume she expects you to follow through. She is just showing you the basic elements. Lighten up.

  • @CajunTaco technically that is a fine brunoise. Brunoise is 1/8"x1/8"x1/8"
