Shocking to watch his filleting. He has a good luck to have any fingers left! I'll do that under 20 seconds and much more easier. Pin boning was ok otherwise just awful!!

@joshlinke Here in Montana we can still catch them when they come through each year for spawning in some of our reservoirs as well as in some lakes. They sell for around $16 lb.

Say a whole fish weights 3kg, how much actual meat would you get from that?

This is the first video that deals with what we refer to on the West Coast of Canada as the "pin" bones. These are the small bones that angle out 45 degrees from the spine and are left behind by the standard filletting process. Very good video.
