Hearts of Palm Salad, called "Palmito" in Spanish, is a favorite salad throughout the world. Many folks have not heard of this unusual vegetable so I thought it a good idea to acquaint my viewers with it. You can buy it fresh in Southern Florida, Texas, and California but it's usually found in ethnic markets canned or in glass jars. It's mostly imported from Brazil and Costa Rica and other South and Central American countries. You might find it interesting to see YouTube videos depicting it's farming and production. This recipe is simply done so as to allow the very subtle taste to come forward and not be accompanied with too many other ingredients.
INGREDIENTS:
1 avocado, cut up ½ medium red onion, rings
½ cup fresh cilantro, chopped ½ cup fresh Italian Parsley, chopped
1 green onion stalk, chopped ¼ cup extra virgin olive oil
1 tsp red wine vinegar 1 14 oz. can Hearts of Palm
1 Large Tomato, sliced
METHOD: Open and drain can of Hearts of Palm, set aside. Lay two tomato slices on each individual salad plate to form base of salad. Form a circle of avocado chunks over perimeter of tomato slices. Place a few hearts of palm slices in middle. Spread a few red onion rings over all. Sprinkle chopped green onion, parsley, and cilantro, then finish salad with a good splash of olive oil and red wine vinegar. Salt and pepper may be done by your guest.
