The use of “non-traditional” ingredients are a result of Mcgovern’s biomolecular analysis of archaeological finds; the other adjuncts, corn sugar, are implemented to boost ABV. It’s all well & fine to make non-traditional/self made styles, however making beer/gruit that taste like nail polish is a rookie mistake. I have brewed enough beer & read enough on the subject of zymology to see that the emperor is not wearing any clothes.

DFH really has grown past the point, yet not grown enough to be able to produce at their larger level and still be able to brew with malts that they have roasted flavor into. They are at a point where they are essentially forced to brew with non-traditional ingredients to get the flavors that they desire. If all of you haters have a problem, brew some beer yourselves and then come back and run your mouths.

Again I think gruit as opposed to beer would be a more accurate categorization of DFH’s products, that said many of their products fall outside of traditional beer style guidelines so it’s hard to assess their products against a standard measure. Of my experience with DFH’s products I have encountered tannins, lactic, aldehyde, sulfur, & metallic tones which are indicative of mashing & fermentation errors. I think Marketing Master would be a more appropriate title for Sam's show.
