During a recent trip to Catalonia, Spain, I visited Granja la Selvatana Dairy Farm in Campllong, a rural destination in the Catalonian Province of Girona. One of the owners, Ana Serra, told us how she left her stressful career to come home to manage the family farm, and how they made the decision to develop their own brand of organic yogurt, Biogust. The secret to producing the most creamy, delicious yogurt I have ever tasted? Happy cows! And I even had an opportunity to milk them. I had always heard it was difficult but I found it to be quite easy. Maybe I had the magic touch but more likely they were really READY to be milked.
