    It's Spanish tocino ibérico and it actually isn't that fatty, at least it doesn't render a lot of fat. It's used for cooking and isn't really meant to eat. It works great for this dish.

  • Here in Spain we have fewer options than the American cook. We use frozen vegetables in out Valencian paella. I can't imagine doing without them.
