This could also be called "lemon meringue pie fudge" because it taste just like it.

1/2 cup butter
1 package (4.3 oz) cook and serve lemon pudding mix (NOT INSTANT LEMON PUDDING MIX) If you can't find cook and serve lemon pudding mix, use about 2 oz of lemon pie mix (about 1/2 cup).
1/2 cup whole milk (I used 2% and it was fine, you could use cream as well)
3 3/4 confectioner's (icing or powdered) sugar
1 tsp lemon extract

  • @yoyomax12 It looks like it would make a killer icing for lemon cake or a cupcake. Do you think I could use it as that, or does it harden when it cools? I understand you said that the fudge should be kept in the fridge, so I was wondering if that was to keep it from melting into an icing consistency, which is what I would want it for. Thanks in advance for the reply. Love your vids btw.

  • @Kaya4114 The recipe suggests you keep it in the fridge for food safety issues I think, but there is so much sugar in there, I don`t think that that is vital. The fudge stays solid at room temperature, it does soften a bit but only a bit.

    Cake issue: I think it would be easily be spread on a cake when it is still hot, after it cools though, I don`t know if it would crack and flake when you cut into the cake. Cupcakes are small and that probably wouldn`t be an issue

  • @kuraitenshu1 I use an editing program and remove the sound from the segment and do a voice over.

  • Oh... When i "tried" to make lemon meringue pie, I didnt wait till it was thick... and i poured it in the pie crust and it was runny still.... boy did i make a mess :( lol

  • @Kaya4114 If you use just the lemon mix for cake it would be really good. i Always make cupcakes and then cut off the tops and put like half a spoonfull on it then put the top back on so its like a little sandwich. you gotta wait till it gets like Jellish so it doesnt run over the sides but it works really good. so i imagine putting it ontop of a cake would be wonderful.
