the tone of the conversation was set at 0:47.. Marco is obviously upset with the way this lady is questioning him.. so he closes up and refuses to play her game.. We need the missing part of the video to deduce just what set him off...

Um, the hostess is far from 'a stupid bitch'. She's having to deal with a young chef, who's clearly three things: 1) extremely complicated, 2) extremely talented, and 3) extremely, extremely, unhappy. Marco was so successful at such a young age, not just because of his incredible gifts (he possesses an exaggerated version of Mario Batali's 'kitchen awareness'), but also because of the horrible things that happened to him when he was younger. He's a major misfit. Kay did her best. Respect cooks.
