【材料】:雞腿2隻、芋頭1斤、玉米粉6大匙、蝦米2大匙、火腿末2大匙、白芝麻1大匙、油蔥酥1大匙、糖1大匙、鹽2小匙、胡椒粉適量、太白粉適量
【做法】:
1. 火腿切丁、蝦米泡軟切末。
2. 芋頭去皮切片狀、放在紗布上、移至蒸鍋中蒸熟。
3. 雞骨去骨、劃四方丁放入熱水中等水滾後熄火蓋上鍋蓋, 燜至8分熟。
4. 爆香蝦米、以及火腿炒香後取出。
5. 再將蒸熟的芋頭壓成泥,加入蝦米、火腿拌勻,再加入油蔥酥、糖、鹽、胡椒粉、太白粉、水拌勻。
6. 雞腿先抹上些許太白粉,再抹上芋泥並壓緊,撒些許白芝麻、以雞皮朝上的方式放入油鍋中,以中高溫火炸至金黃色即可起鍋切塊即完成「香酥芋泥雞」。
