I always make colcannon with potato, kale, and leeks...no bacon...and then add salt, butter, and pepper

My mother taught me to quickly sauté the cabbage in a bit of butter and a sprinkle of pepper. I think it balances out the textures of the dish (soft potatoes, chewy bacon, and slightly crunchy cabbage) and just tastes worlds better than boiled cabbage.
