I just found out about Oxtail stew and OMG!! it's the best part of the cow!.. we cooked them for 5 hrs in a cast iron pot on a woodstove.. this stuff is to die for!

2 things missing...1 tbsp..Kitchen Bouquet when cooking off the flour to give it a lil more color...and some cooked white rice!....but other than that?....*pass!*

Interesting way of making stew...always made my stews with slow cooker...

--maplepoon-- Actually you could just caramelized the meat in the pan and then transfer it to be crock pot (slow cooker). This would capture some of the flavors that browning the meat prior to stealing gives off. It really adds to the richness of the flavor. Glad you found it interesting

i'm going to try this in my croc pot since i never pay attention to cooking for long periods of time. I'm wondering if i can use cornstarch to thicken it?

yes I think you can use cornstarch... just add less then the flour amout and stir in a little before adding any more.
