I see you use canned tomatoes. Jeff, just as you're a mixture of the styles on the left, we're a mixture of the middle. Not all hi gluten flours have additives, especially bromate. Not all high gluten flours are cheap. We also don't all use IDY. Please don't overextend your use of generalities when including a style that'e been in my family for over 50 years.

Thanks for emailing me back. I totally agree this video. It's definitely about using good quality ingredients, not necessarily authentic ingredients. I was raised in Sardegna where pizza is different from Napoli pizza, though I like Napoli pizza as well, but they're all good as long as they're prepared properly.
