OrderlyDeity isn't quite right. A popover is a pastry with a higher-than-normal amount of egg in it. When the batter gets baked, the huge amount of steam generated by the wet batter and the stretchy egg proteins cause the baked good to "pop over" the sides of the vessel it's being cooked in. A good example is the "German pancake," which is a large popover generally made for breakfast, a popover typically topped with butter, powdered sugar, and jam. Tasty, super-cheap, and simple to make.

@OrderlyDeity It's pastry with any kind of filling in it. You dollop on the filling then 'pop over' the other side of the pastry square.
