Chicken Lasagna Rolls recipe

1 medium onion chopped
1/2 cup chopped sweet red pepper
1/2 cup chopped almonds (these stay crunchy after baking and add a really nice touch!)
1/3 cup butter
1/2 cup cornstarch (at first I thought it was WAY too much, but it worked out nicely)
1 1/2 tsp salt ( I used 1/2 tsp salt and this was plenty!)
2 cans (10 1/2 oz each) condensed chicken broth, undiluted.
2 cups cubed chicken (this worked out to 3 medium cooked chicken breasts)
1 package (10oz) frozen chopped spinach, thawed and squeezed dry
1/4 tsp pepper
1/4 tsp nutmeg (don't leave this out, it adds a really nice flavour)
10 cooked lasagna noodles (9 was all I needed)
2 cups milk
1 cup or more of shredded swiss cheese (I used a mozzarella/swiss combo)
1/2 cup dry white wine OR water OR chicken broth

In a large saucepan, saute onion, red pepper and almonds in butter until onion is tender and almonds are toasted. Stir in cornstarch and salt until blended. Stir in broth. Bring to a boil; cook and stir for 2 minutes or until thickened.

Transfer half of sauce to ab bowl; stir in the chicken, spinach, pepper and nutmeg. Spread about 3 tbps over each lasagna noodle (I used 4-6 tbps). roll up and place seam side down in a greased 13"x9" baking dish.

Add milk, 1/2 cup cheese and 1/2 cup wine (or water or broth) to remaining sauce. Cook and stir over medium heat until thickened and bubbly. Pour over roll-ups. Bake uncovered, at 350F for 20-25 minutes. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted.
About 4-5 servings.

  • Am From Egypt And I dont think we have chicken broth here , i dont even know what that is :D what can i use instead of it ?

  • @nOkKzYwOrLd If you simmer a chicken in water and vegetables for a couple of hours and then remove them leaving the liquid only, you have chicken broth.

    Like soup without the stuff in it.,

  • Question: Hello, I tried to make the Chicken Lasagne Rolls, but after I boil the lasagne pieces and let them cool, they stuck together. How did you get yours to be so nice and easy to work with?

  • @emilyhf3 The trick is to cool them down with cold water. Drain off the boiling water and fill the pot (with the noodles) with cold water, repeat until the noodles/pot/water is cold. Leave them in the cold water until you are ready to roll. (Let water drip off or pat lightly with paper towel first).

    Otherwise you can drain off the boiling water and butter the noodles to keep them from sticking (this may make them slippery however)

  • Max is ADORABLE!!! This recipe sounds really good! May be trying this tonight but using flour instead of corn starch since a sauce made with cornstarch gets watery if you reheat it (thinking leftovers!!! YUM!!) :o)
