@CookinWithSurfinSapo thanks mate. Inspired me to get some turkey legs and brine them overnight for a 4 hour roast at ~200 and then a quick sear over charcoal while basting... kids loved them and they were not tough at all. Absolutely delicious!!! and cheap too (at least down here in sydney.. around $4.50 a kilo).

Just wondering how long those Turkey legs were cooking for at 225-250 on the WSM?

@AndyLoops79 I reckon about 1.5 to 2 hours...Just make sure you have a thermometer and test the internal temp for poultry .....
