Q: Whats all the thumping? Is that to excite the fish into a bite, kind of like when fishing for peacock bass in mexico they stick the rod tip in the water and swish it around and the fish grab the lure thats hanging off the tip about a foot or two.

Yes, that thumping is just a wooden handle being tapped on the bottem of the boat. It does seem to excite the fish and make them bite better....sounds weird I know, but it seems to work great for striper...
