1 lb lump crab meat
1/2 panko bread crumbs
1 tbsp old bay seasoning
1 tbsp mayonnaise
1 tsp dijon mustard
1 tsp worcestershire
1/2 tsp salt
1/2 lemon's juice
Beat egg by hand in a medium sized bowl. Add all ingredients except the bread crumbs and crab meat and mix with the eggs into a nice sauce. Now add the crab meat and bread crumbs. Mix evenly. Remember to use quality ingredients. Don't over-mix - keep the bread crumbs crunchy. Take a heaping spoonful and form your patties and place on cookie sheet. Don't flatten or press too hard.
Pan fry with butter (2-3 tbsp each batch), 4 patties at a time. Cook on each side about 3 minutes until a golden brown crust forms. Serve with tartar sauce.
*serves 6-12 (12 crab cakes)
